Water is a better conductor of heat compared to air, which is an insulator. Metals are excellent conductors of heat, not poor ones. Radiation does not require any material medium for heat transfer and can even occur through a vacuum. Lastly, land generally cools down much faster than sea water at night because land has a lower specific heat capacity and loses heat more rapidly.
